<h1>BBQ Pork Chops</h1>

<p>You can't beat good ol homemade bbq sauce. Feel free to make as much sauce as you want and save it for later. It will last a month in the fridge.
Goes wonderfully with some grilled vegetables(asperagus, peppers, zuchini, green beans, eggplant). Just toss em in oil and salt + pepper and grill them till tender.

<h1>Ingredients</h1>
<ul>
    <li>4 pork chops, bone-in or out (preferrably bone-in)
    <li>2 tablespoons oil 
    <li>2 tbsp ketchup
    <li>1/2 cup chopped white onion
    <li>1 tablespoon minced garlic
    <li>1/2 tablespoon grated ginger
    <li>1 1/2 teaspoons chili powder
    <li>3/4 teaspoon ground coriander
    <li>1/2 teaspoon ground cinnamon
    <li>1/2 teaspoon ground cumin
    <li>1/2 tablespoon worshestershire sauce
    <li>1 tablespoon brown sugar
    <li>1 tablespoon mustard
    <li>1/4 teaspoon salt
    <li>1/4 teaspoon freshly ground black pepper
    <li>1 1/2 lbs baby potatoes (any smooth skinned kind, try to stay away from russets or kennebecs)
    <li>3 tablespoons butter
    <li>1/4 cup chopped green onion or chives(or parsley if you have neither)
    <li>2 teaspoons truffle oil(optional, but HIGHLY recommended)

<h1>Directions</h1>

<p>Turn on your bbq to med-high.<p>
<p>Bring about your potatoes, a good pinch of salt and enough water to cover them to a boil, then reduce heat so they're just simmering with a few bubbles, not a rolling boil.<
<p>Add oil to a frying pan over medium heat. Add onions and garlic. Cook slowly, stirring often, until onions are tender,
about 5 minutes. Add grated ginger, and all the spices. Cook 1 more minute. Remove from heat. 
<p>Place all the pan ingredients into a blender, add the ketchup, brown sugar and mustard. Puree until smooth. If the sauce is too thick add a bit of water to help get it moving.
<p>Now it's time to cook your chops. Season them with salt and pepper and place them on a lightly oiled bbq. After 3 minutes turn 90 degrees. After another 3 minutes flip them and repeat. Add some of the bbq sauce once you've turned them over. Add a minute or so to each step if you prefer well done chops. 
<p>If you're grilling veggies now would be the time to throw em on the grill.
<p>To check for doneness of the the pork, it should feel about the same firmness as fleshy part of your hand near the bottom of your thumb when you touch your ring finger to your thumb. Or if you wanna cheat use a thermometer, it should read 63 celcius (145 fahrenheit).

<p>Check on your potatoes, a fork should insert easily and come out without the potato hanging onto it. Once they're done place them in a bowl and crush them slightly with a fork. Add the chopped green onion/chives, salt and pepper to taste,(and the truffle oil if you're a baller).
